You can’t go wrong with apricots, cherries, and pistachios covered in smooth dark chocolate but the real surprise is the hidden chili powder that makes you wanting more.
Wrap this fruit bark up and place a bow on top for an incredibly delicious homemade gift.
12 ounces 90% dark chocolate
1/2 cup apricots, chopped
1/2 cup unsweetened cherries, chopped
1/2 cup dry roasted pistachios, shelled and chopped
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon chili powder, (optional)
2 teaspoon coca nibs
Directions
Rip off a large section of wax paper and use it to cover a cookie sheet. Set aside.
In a double boiler begin to melt the chocolate over low heat. If you do not have a double boiler, fill a saucepan with two inches of water and put a large glass bowl on top.
Once the chocolate is melted stir in the apricots, cherries, pistachios, cinnamon, ginger, and chili powder. If you want to be fancy, reserve 2 tablespoons of pistachios to put on top of the fruit bark.
Remove the chocolate mix from the heat and pour over the wax paper. Spread the chocolate mix evenly over the paper with a spoon. Sprinkle the reserved pistachios and cocoa nibs on top pressing down slightly to adhere.
Refrigerate the fruit bark for 30 minutes. Break into small pieces and serve.
