This is not a ginger snap cookie, but it sure does taste similar to one. As a bonus, you get to bypass all the gluten and highly refined sugar in a regular ginger snap cookie. With minimal ingredients there is no reason why you shouldn’t give this snack a try.
3 cups almonds
2 cup medjool dates, pitted
1 cup unsweetened coconut flakes
4 tablespoons water
4 teaspoons ground ginger
1 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon ground cloves
I just bought a sweet Blendtec! I combined all the ingredients into the blender and pulsed the mixture until it became crumbly. To test the batch, I took a small handful and squeezed it to see if it would hold together and it did. I pulled out the nut mixture and formed a dozen bars that were 5″ long.
If your blender doesn’t have a motor powerful enough to combine these ingredients, you are not out of luck.
Begin by placing all the pitted dates in a microwave safe bowl along with the water. Nuke for a minute and mash the dates with a fork to get a date paste. In a blender combine the remaining ingredients and pulse until your almonds become coarsely chopped.
In a mixing bowl combine the nut meal and date paste and work the two together with your hands. This may take some work but stick with it and you will have a delicious snack in the end.
Form into 5″ long bars and wrap with clear wrap. Store the bars in the freezer until ready to eat.
